Quince

The quince, a golden yellow fruit akin to pear, allures us from season to season with its perfumery and unmatched texture. Just picked, it's soft in the hands but woody on the interior. When poached and cooked down, the fruit undergoes a wonderful transformation, turning blush pink and sunset orange in color, tender in texture, with both apple-like acidity combined with the floral quality of pears. This jam is richly textured compared to most of our jams, where you'll find perhaps a generous hunk of whole softened fruit in the jar. Enjoy especially with biscuits or toast, with sharp, salty cheeses and butter.
