Our Proprietary Collection includes flavors made with proprietary fruit. Katsumi Taki has a particular penchant for innovation when it comes to his stone fruit and each season, he'll take cuttings from existing trees on the farm or wild ones he stumbles across on his drives through the Yakima hillsides, and use grafting techniques to cultivate new and unusual varities. All of these varities are grown exclusively at Mair Farm-Taki and are at least three to five years young before harvesting. These varieties are named in collaboration with the farmer based on their attributes and expressions.
