The Elephant Heart plum is a large, heart shaped Japanese variety with a maroon, mottled skin and bright red flesh. A part of the Rosaceae family, these have a distinctly crunchy skin akin to that of biting into an apple! And the jams deliver that acidity with a burst, cloaked in a deep, juicy, plummy sweetness. This variety is richly textured, spreadable, and perfectly sweet-tart.
