The Burbank Plums made our way into our kitchen for the first time this summer via Grouse Mountain Farm, a small, diversified Organic farm in the Lake Chelan valley, owned and operated by Michael, whom I met this summer as I was scouring the market for stone fruit vendors.

Burbank Plums are a plump, Japanese variety harvested in the early weeks of September with the Italian and Damson Plums, so they boast that late summer residual sugar that we love from our more known European prunes. However, these plums carry a perfect hit of acid in their skins, with a fair amount of juice, so this jam is a wonderful addition to our line up of richly textured, fruit forward jams that are balanced in acid and sweetness.

Michael has been one of the kindest new friends and fruit stewards/cultivators I've made at the University Market - I am remiss to have not introduced myself earlier as he has been one of the longest vending farms at that market, since 1995 along with our other farmer, Katsumi of Mair Farm-Taki. It is one of my greatest joys to arrive early to set up, and to exchange our morning salutations with Michael, his smile full of warmth, and his fruit equally luminous.

This is a limited production flavor.
